Stewed Pumpkin

Savour our delightful and nourishing experience, where we celebrate the rich flavors of Grenada through a dish that embodies our island’s natural beauty and sustainable practices – Stewed Pumpkin with Fresh Coconut Milk.  This dish combines the earthiness of locally grown pumpkin with the creamy richness of freshly squeezed coconut milk, both sourced sustainably to ensure the preservation of Grenada’s precious resources.

The pumpkin, cultivated with care and respect for the land, brings a naturally sweet and savory flavor, while the fresh coconut milk adds a smooth, velvety texture that enhances the dish’s warmth and depth. Together, these ingredients create a harmonious balance, not only delighting the taste buds but also supporting your health and well-being with every bite.

Grenada Cocoa Stew

Grenada Cocoa Stew is a truly authentic and unique culinary experience where we invite you to indulge in the rich and nourishing flavors of our cocoa.  This dish is a celebration of our island’s vibrant agricultural bounty, featuring naturally and sustainably grown Grenada cocoa, complemented by the unique taste of our renowned nutmeg, spices and herbs, all harmoniously blended together to create a stew that is both flavorful and nourishing.

The locally sourced chicken, raised by Akata Farms with care and respect for the environment, adds a hearty depth to the dish, while our Grenada cocoa provides a rich, earthy foundation that pairs beautifully with the aromatic spices all grown on Mt. Parnassus Plantation.  Each ingredient, handpicked and grown with sustainable practices at farms such as Mt. Parnassus Plantation, Bubb’s Model Farms and Good Hope Farms embodies the essence of Grenada’s commitment to preserving the land while offering food that nurtures the body and soul.

Oil Down – Grenada’s National Dish

Enjoy a true taste of Grenada’s beloved national dish – Oil Down. This iconic dish is a celebration of our island’s rich, natural bounty prepared with ingredients that are not only delicious but also sustainably grown to support both your health and the environment.  At the heart of Oil Down is breadfruit, a local superfood packed with nutrients and naturally grown in harmony with Grenada’s fertile soils. 

Alongside this nutritious treasure, we use the vibrant warmth of turmeric, the rich creaminess of coconut milk and an aromatic blend of Grenadian spices and herbs—all carefully harvested to create a dish that is as healing as it is flavorful.  Each ingredient in our national dish represents the essence of our island: nourishing, grounding and deeply connected to the land.

Oil Down “Cook Off”

Sheldon, Lock, Dale, Rosalie – all siblings – hmmm who is the “Boss” of the oil down. Depending on the day enjoy a taste of each.

Sheldon’s Oil Down Recipe

3-4 peeled Breadfruit

10 Okra

4 Clove

3 Bay Leaf

5 Tannia

6 Carrots

2 lbs Yam

2 lbs Flour (corn, cassava, breadfruit or dasheen)

1 lb Pumpkin

3 Pimento Leaves

3 Cinnamon Leaves

1 lb Green Beans

6 Green Bananas

2 lbs Chicken wings or back and neck, salted cod or other meat as desired (traditionally salted pig tail is added)

Callaloo/dasheen bush (enough to cover the top of your pot layered three times)

8 pieces Turmeric (or ground, but fresh is much better)

Coconut milk (1 coconut per breadfruit)

Seasoning (pimento pepper, onion, garlic, green onion, shadow bennie, thyme, big thyme, celery)

Directions

Marinade the chicken overnight with green seasoning.  Peel the breadfruit and remove the inner part (the “guts” you can use to make breadfruit flour), peel the green banana and ground provision.  Grate or blend the turmeric and coconut, strain and add salt, boil for a few minutes and put aside.  Make the dumpling tight meaning kneed it until it is very stiff.  Chop up the seasoning very fine.  Cut up the vegetables.  Layer the pot – breadfruit, meat, ground provision, layer of green seasoning, breadfruit, vegetables, beans, add the remainder of the green seasoning, add the dumpling, cover with the chopped up callaloo.  Pour in the coconut milk.  Cover and allow to steam until cooked.

As you stroll through our plantation, discover how our farming practices embrace the principles of sustainability allowing the earth’s natural rhythms to guide the growth of vibrant, nutrient-rich produce.  From the rich aroma of freshly harvested spices like nutmeg and cinnamon to the colorful bounty of seasonal vegetables and fruits everything here is grown with care ensuring that everything you eat is not only delicious but also nourishing for both body and soul.

Our Farm-to-Fork experience is more than just about food; it’s about connecting to the land, understanding the origins of what we eat and appreciating the deep-rooted traditions of Grenadian farming.
